Firefighter’s Banana Pudding

I love this picture of my fireman husband. I mean, Isn’t he handsome? Those eyes… that smile…those biceps. I’m a lucky gal, aren’t I? Okay, sorry, I’m done.

But Seriously, I love that Jake chose to be a fireman. He does things at work like carry injured men down flights of stairs, cut people out of cars after a bad wreck, jump out of bed at 2 am because someone has had a cardiac arrest, and then again at 3: 30 am to race across town to fight a fire in someone’s home until 8 the next morning. And so do all of his buddies at WMFD. That kind of work deserves reward!

A frequently requested treat among these exceptional civil servicemen is Banana Pudding. This recipe makes Banana Pudding that is light and delicious. Plus, it’s super quick and easy to make (this is a good thing since they normally want it on short notice).

Here’s what you’ll need to make this treat: 5-6 ripe bananas, one package of vanilla wafer cookies, 8 oz of sour cream, one large instant vanilla pudding mix, one small banana cream instant pudding mix, 2 and 1/2 cups of milk, and 32 oz. of whipped topping, (this is one large container or two regular sized containers) *Make sure your whipped topping is completely thawed.

In your mixing bowl, combine your pudding mixes with two and 1/2 cups of milk, mix thoroughly. Add sour cream, mix again.

Add your cool Whip and fold in gently until just combined. Don’t over mix or it won’t be fluffy.

In your serving bowl, place a single layer of wafer cookies on the bottom of your bowl. It’s perfectly acceptable to eat one or two of these yummy cookies while you work. Everyone will agree.

cookie layerYou’ll probably notice about now that my serving bowl says popcorn. This is one of the only big pretty bowls that I had when I first got married, and I’ve always made their banana pudding in it. It just wouldn’t be right to switch things up now.

Slice 2-3 bananas and place a layer of bananas over the layer of cookies. Slice them to whatever thickness you like, just make sure you’ll have enough bananas to make two even layers.

Spoon ½ of the pudding mixture on top of the bananas, spread evenly, then repeat the layering process again. If you have another wafer cookie now, I won’t judge.

To make it all fancy-shmancy, place remaining cookies along the edge of the serving bowl. Crush up any remaining cookies in a zip lock bag and pour the crumbs in a thin layer on top of the dessert.
